I am always very careful with my data useage and am aware of how much I use. I received a notification today that I somehow suddnetly went over my data by 5GB through mobile data and tethering? I was doing grocery shopping by myself when I recieved the notifcation and need some help to solve this issue as I cannot pay $350 + dollars for data that I did not use.

Where did this notification come from? What it from your phone settings or was it sent by us?
It's possible if you haven't set up your billing cycle in your phone settings that it may send you a notification for going over your data, when you didn't actually.
Did you verify your Fido app to see if you actually went over? The correct amount would be shown there.
