My iphone was stolen, and I want to reactivate the new simcard I recieved in store. How would I go about this online?

Welcome to the community!
Sorry to hear you've had your phone stolen. Had you reported it lost or stolen? You can do so via My Account --> Usage & Services --> Mobile. From there, you can click on Report lost or stolen device (near bottom of page under Quick Actions). Doing so would prevent unauthorised usage on your account.
Unfortunately, to update your SIM card online, you would need access to the old SIM card number (see here). I believe you will have to have your SIM card information updated in a Fido store. To prevent fraud, you might need to bring two pieces of identification with you (see here).
