Sorry to hear your information might used to make fraudulent accounts. How did you find out your information was being used? While I can see why they might wish to use someone else's identiy, I'm not sure of the benefit if using your phone number. Any verification codes would be sent to you rather than them. It's not possible to two active SIM cards with the same phone number. That said, do you still have access to your phone number?
Regardless, I think you would need to contact and inform Snapchat and Amazon.ca that your information had been used to open create those accounts. They would likely need to verify the situation before they can take any action.
If your your information has been hacked, you might consider changing the passwords and PINs for your various account accesses. In addition, you might consider verifying you bank accounts and credit cards, if you have them. You might also consider other options suggested here and here. There might also be other websites with additional steps to consider as well.
