I understand that previous models were sold by Fido.
But just want to be absolutely sure an unlocked ZTE axon 7 will work with Fodo before I purchase it.

I've been using an Axon 7 (A2017U) on the Fido network since last October and it works just fine. Wifi calling doesn't work which is a bummer, but the phone has been a champ overall.

Just to clarify, the specifications listed above are for the European (Global or International) (ZTE A2017G) and the North American (ZTE A2017U) versions of the device.
The specifications for the Chinese version (ZTE A2017) are listed below:
TD-LTE:Band 38/39/40/41
FDD-LTE: Band 1/3/7
TD-S: Band 34/39
UMTS: Band 1/2/5/8
CDMA1X/EVDO :BC0
GSM: Band 2/3/5/8
As with the other versions, this device would have all of the compatible bands/frequencies for 2G and '3G'. With regards to LTE, this version only has one of the compatible bands/frequencies, band 7 or 2600MHz. You can verify the compatible bands/frequencies here (note Fido/Rogers also uses LTE band 12 or 700MHz in some areas, not listed on the How to configure page).
While all of those versions should work on the networks, coverage depends on matching bands/frequencies on your surrounding cellular towers. Not all bands/frequencies are used at all cellular towers. You can get an idea of your surrounding towers here.

This is what you need in order for a phone to work on the Fido network taken from here.
Your device must be compatible with the Fido network, which uses GSM, UMTS, HSPA and HSPA+ at 850 MHz and 1900 MHz. To access LTE network, the phone must be compatible with:
700 MHz on Band 17;
1700/2100 MHz on Band 4;
2600 MHz on Band 7.
From the info I found for this phone it comes in two models take from here.

Everything in red would be the USA version and the green would be the China version.
the 2G and 3G is fine on both as for the LTE the USA version has all the bands/frequency to work on Fido's LTE network, as for the China version it only has two compatible bands/frequency (1700/2100 MHz on Band 4 & 2600 MHz on Band 7).
If you have the USA version then you will be good but if you have the China version the LTE may not work depending where you are.
Something to also note when using your own phone that did not come from Fido is if that phone is capable of WiFi calling and VoLTE it may not work with Fido
