This Samsung Galaxy 6S model GT-S7560M has a ton of things on it that I will never use including the internet.
It is constantly sending me voice messages saying that someone is trying to connect to an app. I don't want more...I want less. Any suggestions how to remove or disable the half a million things I don't need would be appreciated.
I just want it for a emerg. phone, the odd regular local call and the odd text. HELP PLEASE!

Did you try disabling the apps you don't use?
You can do that by doing a long-press on the app icon, then select App Info, you'll have the option to uninstall or disable the apps that you don't use.
