If you are currently financing a device, changing your plan will not affect the finance term unless you switch to a BYOD plan. If you switch to a BYOD plan, you will have to pay the remaining device balance.
On the other hand, if you are not financing a device, you are on a month-to-month plan, regardless of whether you are on a BYOD plan or a plan that allows you to finance a device.
