...Will switching to this new plan affect my current device financing or monthly payment terms in any way?..
It would depend on that plan's type designation. When financing devices, the plan-types are either Plus or Entry plans. However, many advertised plans are bring your own phone (BYOP) plans. Unfortunately, BYOP plans are not compatible with financing devices.
That said, as to your question, you can change a plan to one within the same category with the Fido Payment Program (see here). However, if you change your plan to a different category during a contract, you will likely be charged the outstanding balance for the device.
It should be mentioned that since the introduction of their Payment Program, device costs are separate from service plan costs. So your part of your monthly $60 fee you noted would be for monthly financing and another part would be for the monthly plan fee.
With many of the device offers, Fido does not actually discount the cost of the device. Rather, they provide a monthly credit to off-set the device cost. That monthly credit is applied to the bill and not device financing cost. The device cost shown on the website was calcuated after bill credit.
It would be important to note that the monthy financing fee does not actually change, though. If you switch to a plan which is not compatible with financing, you would be required to pay the total remaining balance of the device. That is, the remaining balance would be $ x remaining number of months, not $-credit x remaining number of months as the remaining monthly credits would no longer apply.

When changing plans, the monthly fees for both your old plan and new plan would be prorated on your next bill (see here). You would also get the larger data amount immediately after the switch.
If you wished to discuss your situation and query whether that particular plan is compatible with financing, you would need to contact customer service.
Hope this helps 😀
