I would like to see a list of the text that was sent / received to my cell. I just want to see the date and phone number that the text were sent to or recevied from. Is that possible?

Welcome to the community!
Unfortunately it is not possible for Fido to give you the date and phone numbers for text messages, Fido does not log those information.
