Smoke Fish with Herb Vol-Au-Vents (French Oyster Cases)

Ingredients

3 1/2oz smoked cod

2 egg yolks

1 tablespoon mayonaise

2 tablespoon chopped fresh chives

1 tablespoon chopped fresh parsley

1/2 teaspoon French mustard

1/4 cup grated cheddar cheese

1 egg white

2 dozen oyster cases

Method

Turn oven on and set to 350 F degrees

Blend cod, egg yolks and mayonaise in a mixing bowl until smooth.

Add herbs, mustard and cheese, and mix well.

Beat egg white in a mixing bowl until white is firm.

Fold egg white with cod mixture.

Spoon mixture into each oyster cases and line cases on a baking sheet.

Bake oyster cases in oven fo 10 minutes or until cases turn lightly brown.
