Ingredients:
3 Tbls. olive oil (approx.)
1 med. onion - chopped fine.
I lg. red pepper - cleaned of seeds, stems & ribs and chopped into slivers.
1 fresh sm. hot chili pepper - halapeno or other .. finely chopped.
2-3 garlic cloves, thinly sliced.
1 + 1/2 Tbls. sweet Hung or Smoked Spanish paprika
2 tsp. cumin
1 can whole peeled tomatoes
salt & pepper + fresh parsley &/or coriander
6 - (or less) eggs
optional ingredients: olives, feta cheese, artichoke hearts.
In a frying pan (I love my cast-iron one)....simmer the onion, red pepper & chili until browned.
Add garlic & stir for 30 seconds.
Add paprika & cumin & stir.
Add tomatoes, stir, reduce heat and simmer for about 10 mins.
Then break up the tomatoes with a fork or a pastry blender.
Season with S & P
Next: with a spoon make spaces around the edge of the frying pan.
Into those add the cracked eggs.
Spoon sauce over the whites of the eggs.
Cover and let simmer for 5-8 mins.
Adding optional extras after 5 minutes or so.
Sprinkle with cilantro and/ or parsley and serve ... with toast!

Always like Mediterranean food. All those spices make your saliva flow....yum.
I confess, I had not read and/or fully understood the requirements of this great contest. So, my recipes did not truly meet the appropriate needs/rules. But, they are some of my favorites and can be made so quickly that I feel they should be in one's arsonel of "happy gathering times" types.
