Mexicasian Nachos w/ mint and spinach yogourt dressing
Step one : the secret to amazing nachos is making sure each tortilla chip is fully loaded. I prefer to use round chips and triangles work as well. Start by pitting about a teaspoon of récries beans on each chip. Then some sala, don't worry about using a spicy kind, the yogourt dressing will calm things down. One the plate is full on chip (covered in beans and salsa) its time to add the cheese : I like to mix up a few kinds (white and organe cheddar, some queso or feta). Then start a new layer of chips... ideally you want to get 3-4 layers. When ready put in the microwave or regular oven to melt the cheese.
Step two : use a blender to incorporate fresh baby spinach, dried mint, salt and thick 10% Greek yogourt...then poor over the hot nachos and serve with a cold beer or tequila.
