Jollof Rice


  • 3¾ cups (750g) rice
  • 2-3 cups Tomato paste
  • Chili powder (or ground chilli)
  • Chicken (whole chicken, drumsticks or chicken breast)
  • Pepper and salt (to taste)
  • 2 medium onions
  • 3 Seasoning cubes
  • 2 teaspoons thyme
  • 2 teaspoons curry powder

Cooking Direction

1. Boil the chicken with some onions and seasioning (as if making chicken broth)

2. In another pot, fry some oninon, add tomato paste add chili powder, add thyme and curry

3. Add chicken broth ( enough to cook rice without having to drain) add seasoning to taste (remember you added seaoning to chicked broth earlier, don't go overkill on the seasoning) bring to boil, add rice

4. When rice is almost cooked add salt ( dont ad salt at the broth stage, if you do, don't turn the food tilll it's cocked, cause it will start burning)

5. Serve with fried chicken or any protein of your choice Smiley
