Brazilian Cheese Puffs (Pao de Queijo)

Preparation Time: 5 Minutes Thermomix Time: 8 Minutes Standby Time: 20 Minutes Baking Time: 20 Minutes Total Time: 1 Hour

Ingredients

A - 150g Cheddar Cheese and Parmesan Cheese (50/50 Mixed)

B - 200g Milk, 100g Sunflower oil/Canola oil/Grapeseed oil/Olive oil, 1 tsp Salt

C - 250g Tapioca Flour

D - 2 Eggs

Method

Preheat oven 180 C / 350 F

  1. Shred ( A ) and set aside.
  2. Heat ( B ) for 1 min in a microwave
  3. Add ( C ) to ( B ) in a mixing bowl and mix for 20 seconds
  4. Let stand for 10 minutes to cool. 
  5. Add ( D ) and ( A )  to ( C ) and ( B ) and knead for 2 minutes.
  6. Remove dough from bowl and let it stand for 20 minutes.
  7. With ice cream scoop, form balls unto a lined greased baking sheet.
  8. Bake for 20 – 25 minutes.

Sounds good, and I love S. American-type food ...  but I'm not familiar with the meaning of your monikors (smiley faces etc.) so I'd like to know what they imply.  Thanks for any answer you may offer.
